Step into our working bakehouse and learn to make the rustic bannocks that Mrs Fitz and the kitchen women of Castle Leoch would have cooked in Outlander. Guided by Iain Campbell, 7th-generation award-winning baker and owner of Campbell’s Bakery, you’ll experience the simple, hearty Highland breads once prepared daily in Scottish homes.

In this relaxed, hands-on class, you’ll mix, knead, shape and cook traditional bannocks on our bakery’s hot plate — the modern equivalent of the old Scottish girdle. You’ll also see our own heirloom bakery griddle, passed down through generations and learn how bannocks were cooked on it in centuries past.

Using time-honoured methods and wholesome ingredients, you’ll create bannocks just as they would have been made in the 18th century — rustic, comforting and deeply rooted in Highland tradition.

Iain will share the history and everyday importance of these sustaining breads — from their role in Highland kitchens to the techniques that give them their distinctive flavour and texture.

Enjoy tea, coffee, and our handmade cakes half way through the class as Iain shares stories from the bakery’s heritage and the enduring tradition of bannock-making across generations.

Leave with your own warm bannocks, wrapped for travel, along with newfound skills and a deeper connection to Scotland’s Highland past.

Recipes, ingredients, utensils, knives, equipment, aprons and hair nets are provided for all courses. A tea/coffee break approximately halfway through the class. You will be taking home A LOT of baking. Please bring at least two large carrier bags. We reserve the right to make amendments to course content and recipes without notice.

Children: As our classes take place in an industrial bakery with large equipment, for health and safety reasons, children may only participate when accompanied by a responsible adult. Each child must have a dedicated, paying parent or guardian providing direct supervision at all times during the class.

Special dietary requirements & food allergies:

We are unable to tailor our course content for special dietary requirements. Please inform us in advance of any allergies, disabilities, diabetes, pregnancy, epilepsy, learning difficulties etc.

Please be aware our products and premises may contain the following allergens: celery, cereals that contain gluten such as oats and wheat, crustaceans, eggs, fish, lupin, milk, mustard, tree nuts, peanuts, sesame seeds, soybeans, sulphur dioxide and sulphites.

 

We like to make the most of our time, please arrive 5 minutes early so we can begin promptly.

If you are late, please be aware that the class may have started. Wherever possible, we will allow you to join in, however if you have missed essential parts of the class, this may not be an option. A refund will not be provided in this instance.

 

Clothing: We suggest you wear layers as you could get a bit warm while baking. We lend you a Campbell’s apron so no need to bring your own. Please wear flat, non-slip soles with covered toes. Please keep long hair tied back and remove any jewellery.

Parking: There is free parking just down the road in the car park opposite the Co-op supermarket on Union Terrace.

Accessibility: Please understand, due to the age and construction of our premises, there are many levels on the ground floor of the building and the toilets are located upstairs.

 

To request a cancellation you must provide Campbell’s Bakery with written notice via email. Unless you have received acknowledgement from us that we have received your request, you cannot consider your request accepted. You may only terminate the contract in the circumstances set out below:

Course cancellations with more than three months from of the start of your course

You may request a change of course date up to three months before the start of the course and we will happily transfer you to another course date, subject to availability.

You may also request a refund up to three months before the start of the course you have booked. 

Course cancellations within three months of the start of your course

If you are unable to attend a course within 3 months of the start of the course, we regret that we will be unable to  refund or reschedule the workshop.

Travel insurance

We strongly recommend travel insurance that will cover your costs in the event of you being unable to attend your course.

Travel insurance will cover you for many issues that may prevent you from attending your course such as travel disruption, illness, sickness of an immediate relative, etc.

Gift vouchers:

Refunds are not available on gift voucher purchases, nor can gift vouchers be exchanged for cash or other goods. Gift vouchers are transferable, so if you are unable to make your course, you may contact us to nominate a replacement. Gift vouchers are valid for one year from their date of purchase.

Cancellations by Campbell’s Bakery:

Campbell’s Bakery is entitled to cancel any course at any time subject to the repayment of any deposit and fees received in respect of the course or the part of the course which has been cancelled.

In the unlikely event of cancellation of a course by ourselves, we undertake to offer a suitable transfer to an alternative date or course, or a full refund (within 14 days) of any course fees. However if the workshop was paid for by gift voucher(s), we will replace the vouchers to the value.

We cannot be held liable for any third-party costs, such as travel bookings or accommodation with hotels other than our own.

Refunds: 

No refund will be made if you fail to attend all or any part of a course (and Campbell’s Bakery is unable to reallocate your place).

All refunds are made to the source of the initial payment, ie. fees paid by a credit card can only be refunded to the same card.

Privacy policy: 

We do not store credit card details nor do we share customer details with any 3rd parties.

Liability: Campbell’s Bakery will not accept responsibility for the loss of any personal possessions.
